Pro-giser Balls

Screen Shot 2015-06-29 at 6.00.22 PM Last night I was craving something sweet and since transitioning from vegetarian to vegan I can no longer reach for naughty treats in the cupboard like chocolate or biscuits like I used to which is great in a sense as I don’t have that sense of guilt anymore. I decided to whip up some protein balls to cure my craving and they turned out amazing! I call them pro-giser balls short for protein energy balls.

Ingredients:
2 cups of medjool dates
1/2 cup of walnuts
1/4 cup of pine nuts
1/4 cup of dried cranberries
1 scoop of protein powder of choice
1 – 2 tablespoons of cacao
2 tablespoons of shredded coconut
Organic rice malt syrup

Method: Finely chop (or blend in a food processor) dates, nuts and cranberries and place in a bowl. Add protein powder, coconut and cacao powder. Mix. Slowly add the organic rice malt syrup until the mixture combines. Be careful not to add to much as you need the mixture to be firm enough to roll into balls. Roll the mixture into 1″ size balls. On a plate pour a thin later of cacao powder and coconut next to each other and roll the balls through both mixtures coating the outside. Place the balls in the fridge for 1 hour to set. Enjoy!
